Mexican Style Chicken and Spinach with Orzo

This is another quick dinner dish which can be put on the table pretty fast. Some fresh and warm garlic bread on the side makes a great accompaniment.

Ingredients

1 cup – Cooked Chicken

½ cup – chopped frozen Spinach

2 tbsp – Carnea Asada Marinade

1 can – tomato soup

½ tsp – sweet cayenne pepper

½ cup – milk

¼ cup – mozzarella cheese, shredded

2 cups – Orzo

2  -  scallions, chopped

1 tbsp – Olive Oil

Method

Cook the orzo and keep aside.

Drizzle the oil in a hot pan and add the scallions.

After a quick toss add in the spinach.

Once the spinach is almost thawed, add in the chicken and the marinade.

After a minute add the soup and pepper and bring it to a simmer.

Next add the milk and cheese.

Stir until the cheese is well incorporated and remove from heat.

Put the orzo in a bowl, spoon the chicken spinach mixture over it and serve immediately.
