Mango Delight

This is a recipe inspired by a few of my favorite drinks and desserts. One of them being the 16th Street Soda’s at Paramount Café. The others being ice cream soda and mangoes.

 I would have preferred sparkling water, but 7 Up or Sprite can work just as well.

Mango Delight

Ingredients

2 tablespoons mango juice
1 can 7-Up®
1 scoop vanilla ice cream
1 tablespoon mango, chopped

Method

In a tall glass Pour in the mango juice

Carefully pour in the 7 Up. 

Place a scoop of vanilla ice cream on top

Garnish with the mango pieces and a sprig of mint

Serve immediately.

Vanilla Ice Cream and Mango is considered the ultimate dessert during Indian Summers.  We seem to have mangoes in plenty at our local Indian store and who can resist fresh sweet mangoes.

I think this dessert would go perfectly with the current FMR Indian Dessert Challenge.
