Spinach and Chicken Breakfast Muffins
This is a great wholesome breakfast to grab and go. It is also pretty easy to make.
Ingredients
Bisquick – 3 cups
Milk – 1 cup
Cooked chicken – ½ cup ( I used fully cooked chicken sausage, cut into little cubes)
Olive oil – 3 tbsp
Spinach – ½ bunch or 2 handfulls chopped fine.
Ginger and garlic – ½ tsp minced
Eggs – 2
Cheese – ¼ cup shredded, your favourite ( hard or semi soft variety preferable)
Method
Heat about a teaspoon of oil in a pan and add the ginger and garlic. Reduce to low heat and add the spinach after a few seconds. Cook until the spinach just about wilted.
Combine all the ingredients in a bowl and fill into pre- greased muffin cups. Bake at 400 degrees in a preheated over for 15-20 min.
Remove immediately and serve warm. They can also be refrigerated after they have cooled down completely. Reheat in a microwave oven for 15- 20 seconds before serving.
Makes approx 18 muffins.
